Seeds from the Acacia Victoriae tree (Wattleseed) is considered a backbone of bushfood nutrition. Wattleseed is high in Protein, Zinc, Iron, Calcium and Potassium. Seeds are roasted and ground and have a nutty, earthy flavor with hints of roasted coffee and chocolate.

Uses
Baking to flavouring sauces and casseroles, ice creams and used as a beverage or as an addition to chocolate or desserts.
Tea
Pour boiling water over a teaspoon of ground wattleseed. Let steep for 3 minutes and enjoy this caffeine free, chocolatey coffee, nut-flavoured tea.
Sauce
Mix together equal portions of ground wattleseed, mustard and honey. Pour over favourite protein (kangaroo, emu, beef, pork or tofu).
Syrup
Boil ¼ cup sugar, ¼ cup water and one teaspoon of ground wattleseed for 5-10 minutes. Strain and pour over icecream for an affogato or add to a coffee or a milkshake.
