Damper is traditional bread in Australia. It can be jazzed up with feta cheese, herbs, spices, fruits or relishes to change it up. For plain damper, simply omit the relish from recipe below. Enjoy as a side dish or snack.

Bush Tomato Damper Ingredients
3 cups self-raising flour
1/4 cup extra self-raising flour (for kneading)
1 cup powdered milk
200ml My Dilly Bag Bush Tomato Relish
1/2 cup Soda water
Bush Tomato Dip Ingredients
250g spreadable cream cheese
1/2 cup My Dilly Bag Bush Tomato Relish
Method
To prepare the damper, sift all dry ingredients and add the relish and soda water (add soda water slowly to add moisture as needed). Very quickly combine and dust surface with extra flour and knead.
Cut into 10 and individually roll 10 balls.
Bake in a moderate to hot oven (190 C / 375 F) for 10 minutes.
Meanwhile, prepare the Bush Tomato Dip by combining cream cheese and relish. If using Philadelphia Cream Cheese, use a blender to avoid lumps. If using spreadable cream cheese, mix by hand until smooth.
Confirm damper is cooked by inserting a thin skewer (needs to be clean). Serve warm with dip.
