Buttermilk and Pepperberry Blinis Recipe

Ingredients:

  • 175g plain flour
  • 1 flat tsp ground Tasmanian Pepperberry
  • 1 tsp dried yeast
  • 120ml buttermilk
  • 120ml milk
  • 2 eggs
  • 1 tsp honey

Directions:

  1. Sift dry ingredients into a large bowl.
  2. Mix wet ingredients together well and blend into dry ingredients. Cover with plastic wrap and stand at room temperature for 30 minutes.
  3. Pan fry gently as for pikelets.

Serving Suggestion:
Excellent little pancakes to serve with your favourite toppings: cream cheese, smoked salmon filigrees, hummus and roasted red peppers.
