Recipe Inspiration: Saffron & Lemon Myrtle Fettuccine with Creamy Chicken and Peas

Ingredients:

250g Saffron & Lemon Myrtle Fettuccine
1 tbsp olive oil
1 tbsp butter
2 cloves garlic, minced
300g chicken breast, sliced
½ cup cream
½ cup chicken stock
½ tsp Lemon Myrtle flakes
½ cup peas (fresh or frozen)
Sea salt and cracked pepper, to taste
Lemon zest, for garnish

Directions:

  • Cook fettuccine in salted boiling water for 7–8 minutes, or until al dente. Drain and set aside.
  • In a large pan, heat olive oil and butter. Add garlic and sauté until fragrant.
  • Add chicken and cook until golden. Stir in cream, stock splash of white wine optional
  • Simmer for 3–4 minutes.
  • Add peas and toss the cooked pasta through the sauce.
  • Season, garnish with lemon zest, and serve immediately.
